Quick Tip: Easy & Nutritious Salad
This is my lunch today - sauerkraut and wakame salad with avocado and sesame seeds.
Easy! Soak wakame in warm water (after breaking or cutting into small pieces) for about 5 minutes. Squeeze the water out, combine with sauerkraut. Dress with toasted sesame oil, apple cider vinegar, and soy sauce/tamari/braggs. Top with diced avocado and a dash of sesame seeds. This is a great salad to take to work because it's already soggy - but in a good way!
Wakame contains fucoxanthin which is a natural weight loss aid, the omega-3 EPA, and iodine (thyroid support).
Sauerkraut is a wonderful source of probiotics and Vitamin C. See my very 1st post all about sauerkraut. I prefer homemade unpasteurized sauerkraut but there's quite a few great local companies cropping up such as Cultured Pickle Shop and Farmhouse Culture.
Or just ask yours truly for a jar of homemade sauerkraut, I usually have a bunch to give away when I make big batches!
